1. Curry Mango

  • Growing up in Guyana 🇬🇾, one of my favorite school snacks was curry mangoes. It’s sour, it’s sweetly mixed in with all those spices as well as heat from the peppers. It’s a simple, healthy vegetarian dish than anyone would love.

1.1. Ingredients

  • 2 mangoes are needed. (not fully ripe, not fully green)

  • 1 hot pepper (chopped) (habanero, chili, etc.)

  • 2 cloves garlic (chopped)

  • 3 tbsp curry powder.

  • 1 tbsp garam masala mixin or make your own

  • 2 tbsp water (for curry)

  • 1 tsp cumin (geera powder)

  • 2 tbsp salt

  • 2 tbsp oil

  • black pepper (to taste)

1.2. Preparation

  1. Cut up the mango and remove the inner lining that holds the seed and the seed itself. cutmango

  2. Add spices in Bowl masala

  3. Mix the curry, cumin, black pepper, and water together. mixspices

  4. In a pan add oil, when oil is hot add the curry mixture. oilpan

  5. Keep stirring until all water is evaporated from the mixture. curryinpan

  6. Add the garlic and peppers in to the pan. peppers

  7. Add mangoes in pan and stir it up mangoesinpan

  8. Add water and salt to the pan almost covering the mangoes. addwater

  9. Cook for about 5 -7 or longer, minutes to allow the curry to infiltrate and the water to evaporate. The mango should have a pasty consistency when cool. stir
