1. Background

I have decided to post some recipes I have started to use during the COVID-19 pandemic. Hopefully you can try it out and enjoy it as much as I am enjoying them. I will link to recipes that I found on the internet and used instead of adding them to this document.

2. Root Veg

Boil & Fry

What root vegetables do I like? Hmm…​ They are the traditional roots you find in the tropics.

Root Vegetables

  • 1 Cassava

    • Peel the yucca make sure it does not have black spots, means it’s bad - taste is bitter

  • 1 Plantains

    • peeled, preferably green, but some like semi-ripe

  • 1 Potato

    • peeled

  • (optional) 1 white sweet potato

    • peeled

Ingredients

  • 1 Green Bell Pepper (chopped,) or you can mix different colors

  • some garlic, about 3-4 pieces (minced)

  • 1/2 onion (chopped)

  • 1 tablespoon oil

  • 1 chopped tomato

  • salt to taste

2.1. Preparation

  • cut upt the cassava, plantains, potatoes into bite size.

  • place in pot to boil.

  • after 7 minutes of boiling, check for the tenderness of the vegetables. If tender, strain and set aside.

  • In a pan, add oil, onions, peppers, garlic.

  • Let the onions soften and start to caramelize

  • add the garlic and tomatoes to the pan.

  • add the vegetables to the pan next. Stir them up in the oil/onion/garlic mixture. Let them "fry" for 2 minutes, add salt and turn off.

That’s all there is to boil and fry. Now if you want to take it to the next level, a bit of salty flavored, throw in some salted fish to the pot.

2.1.1. Preparation of Salted Fish

  • Wash the fish, It’s really salty. Take out the outer salt from the fish.

  • Next, in a pot add the fish and put it to boil.

  • After 5-7 minutes of boiling, throw out the water and add new water and boil again. After 5-7 minutes again strain out the water. Taste the fish, if it’s too salty boil it again.

  • Set aside fish.

2.2. Adding Fish to the recipe

  • picking up after adding garlic and tomatoes in the above step, add the salt fish to the pan. This is where you mix the fish into the onion, garlic, tomatoes to add those flavors. Once the fish is sautéed add the vegetables and continue with the above steps.

To spice it up some more add your favorite peppers, for example, scotch bonnet, or habanero or any chilli you like. Add this pepper during the garlic and tomato step.
